No bake sugarfree coconut balls are simple to prepare and a big party hit.
No bake sugar free coconut balls you can have in your fridge anytime you feel like nibbling on something. If you like coconut based desserts as much as we do, I promise you’ll love this one. I don’t know too many desserts that is simply a great success and you don’t need a lot of time to prepare it. I personally love the process of making it as I usually have an excellent helper, my little son who enjoys digging his hand into the dough and making walnut sized balls out of the mixture.
Summertime, when you don’t want to turn your oven on no bake sugar free coconut balls are excellent alternative of teatime snack.
Ingredients:
15 cherries or sour cherries (de-seeded)
0.1 litres of berry juice to make it moist
100 grams coconut flakes
Put biscuits into a mixing bowl and crush them.
Soften butter so you will be able to work with it easier. If butter is hard you can’t mix it well with the crushed biscuits.
Add softened butter, cocoa powder, black cherry jam and cherry juice into the bowl too. Mix and dough it until you get a smooth, even dollop. (My little helper comes this point to dough the mixture. Kids just love mucking around… Great activity for them.)
4. Get a little amount of the mixture (walnut size) and form balls out of it.
Roll it into the coconut flakes. Make sure the whole ball is covered.
Pop them in the fridge for half an hour.
Serve coconut balls with your tea or any snack of the day.
